Apricot Chicken Skewers

There is nothing like chicken skewers right off the grill, but come winter (when my grill is covered in snow!), these skewers are easily prepared all at once on a sheet pan under the broiler. Be sure to watch carefully to prevent burning!

Cook’s Tip – Do Ahead: Be sure to soak wooden skewers for at least 30 minutes prior to threading the chicken. in order to prevent burning upon contact with intense heat.

Ingredients

For Chicken Skewers:

  • 1/3 cup olive oil
  • 1½ teaspoons paprika
  • ½ teaspoon cinnamon
  • ¼ teaspoon allspice
  • ½ teaspoon ginger
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 4 boneless chicken breasts, cut lengthwise into long 1-inch thick strips (or can also use chicken tenders)

For Apricot Dipping Sauce:

  • 2/3 cup apricot preserves
  • 1 tablespoon water
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 1½ teaspoons Dijon mustard
  • ¼-½ teaspoon minced peeled fresh ginger
  • ¼ teaspoon garlic powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Marinate: Combine oil and spices in a large mixing bowl. Add chicken strips and toss to coat. Cover and marinate for at least 30 minutes or up to 4 hours in the refrigerator. Meanwhile, soak skewers in water to cover and prepare dipping sauce.
  2. Dipping Sauce: Melt jam in a small saucepan over low heat or in microwave. Stir in remaining ingredients, whisking to blend. Season to taste with salt and pepper to taste. (Do Ahead: Sauce may be made 4 days ahead).
  3. Line a baking sheet with foil and set aside. Preheat broiler to high setting.
  4. Broil: Weaving back and forth, carefully thread the chicken strips onto the skewers. Place threaded skewers onto the prepared baking sheet arranging in a single layer. Broil skewers for 8-10 minutes per side, turning once during broiling.
  5. To Serve: Transfer skewers to a large platter and serve hot with Apricot Dipping Sauce (sauce can be served room temperature).
