Quesadillas are a fun spin on your average grilled cheese and a great way of adding in some extra vegetables into the meal.  Serve with guacamole (recipe to follow), salsa and sour cream on the side.  Below are two variations for quesadillas, but feel free to just make plain cheese quesadillas if you have picky eaters at home.

Recipe

Ingredients

  1. 1 to 2 tsp. vegetable oil or Pam spray if using a non-stick pan
  2. 8 (8-inch) flour tortillas
  3. 8 oz. Monterey Jack or sharp Cheddar cheese, coarsely grated (about 2 cups)
  4. Corn & Mushroom Filling
  5. 1 small can corn, drained
  6. 6 oz. fresh mushrooms, sliced
  7. 1 jalapeño pepper, seeded and minced (optional)
  8. Black Bean & Red Pepper Filling
  9. 1-2 tbsp. olive oil
  10. ½ onion, diced
  11. ½ red bell pepper, seeded and diced
  12. ¼ tsp. kosher salt
  13. ½ teaspoon ground cumin
  14. ½ cup canned black beans, rinsed and drained
  15. 2 tablespoons finely chopped fresh cilantro
  16. Guacamole
  17. 2 medium ripe avocadoes
  18. 2 tbsp. fresh lemon/lime juice
  19. 1-2 garlic cloves, minced
  20. 1 large plum tomato, diced
  21. ½ tsp. salt
  22. ½ tsp. cumin
  23. freshly ground black pepper, to taste

Instructions

  1. Brush 1 teaspoon of oil in a 10-inch heavy skillet and place over moderate heat until hot but not smoking.
  2. Place a tortilla in the bottom of the pan. Spread a layer of cheese over the tortilla; sprinkle about ¼ cup filling evenly over cheese. Cover with another tortilla.
  3. Cook until underside is golden, about 2 minutes. Carefully flip and cook until other side is golden, 1 to 2 minutes more. Transfer to a plate. Repeat with remaining tortillas.
  4. Cut into wedges (like pizza) and serve with guacamole (directions below), salsa and sour cream on the side.

Guacamole

    1. Cut the avocadoes in half, remove pits (reserve for later use) and spoon avocado out of its skin into a large shallow bowl.
    2. Add lemon or lime juice and mash to desired consistency (some like it chunky, some like it smooth) with a fork.
    3. Stir in remaining ingredients.  Season to taste.
    4. Replace pits in container for storage until serving time in order to keep bright green color (discard before serving).
    5. Cover tightly and chill.
